Choco Lava Cake + Orange custard
Does this kind of recipe or food even need an intro? I'll keep it short and sweet but just had to share this recipe! Seriously delicious goodness that is really quick and easy. Remember treats are always treats and there is still some sugars (even though natural they are still sugar) but life is to be enjoyed and I love to enjoy food! I hope you luuurrvvveee this one too!
Choc Lava Ingredients
180g Butter
180g quality dark chocolate (or make your own like us!)
2 eggs
2 egg yolks (save the whites and add to tomorrows breakfast)
20g Honey/Rice Malt Syrup or your preferred natural sweetener
40g Gluten free flour (I use a maize/tapioca/rice flour combo)
Choc Lava What to do next:
Set oven to 200℃ and grease 6 ramekins
Place chocolate in processor/bullet (or my fav the thermie 5sec/Speed8) and blitz
Place butter and chocolate together and melt (either over simmering water or in thermie 3mins/60℃/Speed2) then set aside
Place eggs, egg yolks and sweetener into mixing bowl and beat (Thermie 1min/speed4)
Add flour and mix through (thermie 10sec/speed3)
Add reserved chocolate mixture and combine (thermie 20sec/speed3)
Pour the mixture into ramekins and bake for 10-12 mins until just set
Remove from the oven and let cool for 5 mins
YUMO! Serve with orange custard or your preferred topping
Orange Custard Ingredients
1 orange zest + juice
30g tapioca flour
20g natural sweetener e.g. honey, rice malt syrup
2 eggs
500g coconut cream
Orange Custard What to do next:
Blitz lemon zest & tapioca flour in processor, bullet or Thermie (4sec/Speed10)
Combine with eggs and milk in Thermie (7min/90℃/speed4) or saucepan M/H heat while wisking
Serve warm on your Choc Lava Cake
